Antipasto Skewers Appetizer

Ingredients
  • 1 cup mini mozzarella pearls (pasteurized)
  • 1 ½ cups cherry or grape tomatoes
  • ¾ cup pitted olives (kalamata or green)
  • 12 –15 salami slices, folded into quarters
  • ¾ cup marinated artichoke heart quarters
  • Fresh basil leaves
  • 1 cup cheese-filled tortellini, cooked and cooled
  • Balsamic glaze, for drizzling
  • 6 -inch wooden skewers

    Cook the tortellini according to package instructions.

    Arrange all ingredients in bowls to create an easy assembly line.

    Thread a tomato or mozzarella pearl onto each skewer.

    Add folded salami, a basil leaf, and an artichoke piece.

    Slide on one tortellini and one olive.

    Finish with another tomato or mozzarella to secure the skewer.
