Ingredients
• 2 sheets puff pastry, thawed
• 3 cups Granny Smith apples, thinly sliced
(about ⅛ inch)
• ¼ cup brown sugar, packed
• 1 tsp ground cinnamon
• 1 tbsp lemon juice
• 1 egg, beaten with 1 tsp water
(egg wash)
• 2 tbsp apricot jam + splash of water
(glaze)
• Powdered sugar, optional
Instructions

1. Preheat oven to 400°F (200°C). Line baking sheet with parchment.

2. Slice apples thin. Toss with lemon juice, brown sugar, and cinnamon. Rest 5 minutes.

3. Cut pastry into 3–4 inch squares (6 per sheet, 12 total).

4. Lay apple slices on each square, leaving ½-inch border. Fold edges up slightly.

5. Brush pastry borders with egg wash.

6. Bake 18–22 minutes until golden and puffed. Rotate pan at 10 minutes.

7. Microwave apricot jam with a splash of water for 20 seconds, stir smooth. Brush over warm tarts immediately.

8. Cool 10 minutes. Dust with powdered sugar if desired.
