Ingredients
½ cup unsalted butter
(softened)
¾ cup brown sugar
¼ cup granulated sugar

egg

tsp
vanilla extract

¾ all-purpose flour
½ tsp baking soda

ground cinnamon
¼ tsp salt

cup
fresh apple, peeled and diced
(Honeycrisp or Granny Smith)
¾ cup soft caramel candies or caramel chips, chopped into small chunks
Instructions

Cream the butter and sugars in a bowl until fluffy.

Mix in the egg and vanilla until fully combined.

Whisk dry ingredients in a separate bowl, then stir into wet mixture.

Fold in apples and caramel gently until just combined.

Scoop and bake at 350°F (175°C) for 10–12 minutes on a lined tray.

Cool and serve after letting cookies rest on the tray for 5 minutes.
