  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • Wet Ingredients
  • 2 large eggs
  • ¾ cup vegetable oil
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • ¾ cup hot coffee or hot water
  • Add-Ins
  • 1 ½ cups pitted cherries (fresh or frozen, lightly dried)
  • ½ cup chocolate chips
  • Optional Chocolate Glaze
  • ½ cup chocolate chips
  • 2 tbsp cream

    Preheat oven to 175°C and line a round cake pan with parchment paper.

    In a large bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt.

    In another bowl, whisk eggs, oil, buttermilk, and vanilla.

    Combine wet and dry ingredients, then slowly add hot coffee or water until smooth.

    Fold in cherries and chocolate chips gently.
