Coconut Pecan Cookies

Ingredients
  • 1 cups ½ (3 sticks)
  • 1 cups ½ packed brown sugar
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 3 tsp pure vanilla extract
  • 3 cups all-purpose flour (leveled)
  • 1 tsp ½ baking soda
  • ¾ tsp salt
  • 2 cups ¼ sweetened shredded coconut, toasted
  • 1 cups ½ chopped pecans, toasted
Instructions

    Preheat oven to 350°F (175°C) and line a baking sheet with parchment.

    Cream butter and sugars until light and fluffy.

    Add egg and vanilla; mix well.

    Stir in flour, baking soda, and salt until just combined.

    Fold in coconut and pecans.

    Scoop dough onto baking sheet and bake for 9–11 minutes.

    Cool on wire rack before serving.
