Ingredients
  • 1.5 lb fingerling potatoes, halved lengthwise
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tbsp fresh parsley, chopped (for garnish)
Instructions

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Place the fingerling potatoes in a large bowl.

    Add olive oil, garlic, salt, pepper, rosemary, and thyme.

    Spread the potatoes in a single layer on the prepared baking sheet, cut side down.

    Roast for 30 minutes, flipping halfway, until golden and fork-tender.

    Remove from the oven and garnish with fresh parsley before serving.
