Lemon Blueberry Cookies

Ingredients
  • • 1/2 cup unsalted butter, softened (1 stick)
  • • 1/2 cup granulated sugar
  • • 1/4 cup brown sugar, packed
  • • 1 large egg
  • • 1 tablespoon fresh lemon zest
  • • 1 teaspoon vanilla extract
  • • 1/2 teaspoon lemon extract (optional)
  • • 1 1/2 cups all-purpose flour, spooned and leveled
  • • 1/2 teaspoon baking soda
  • • 1/2 teaspoon baking powder
  • • 1/4 teaspoon salt
  • • 3/4 cup blueberries, fresh or frozen (do NOT thaw)
  • • 1/2 cup white chocolate chips or chunks

    Preheat oven to 350°F. Line pans with parchment.

    Cream butter and both sugars until lightened.

    Mix in egg, lemon zest, vanilla, and lemon extract if using.

    Add flour, baking soda, baking powder, and salt.

    Toss frozen blueberries in 1 tsp flour. Fold into dough with white chocolate in 6–8 strokes.

    Scoop into 1 1/2-tablespoon portions.

    Bake 10–12 minutes. Cool on pan 5 minutes before transferring.
Note

For best results, use fresh lemon zest and juice — it enhances the citrus flavor.

If using frozen blueberries, do not thaw. Toss them in a little flour to prevent streaking.

Chill the dough for 20 minutes if it's too soft to handle.
