Ingredients
  • 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (optional for coating)

    Whisk flour, baking powder, and salt in a bowl.

    Cream butter and sugar in a large bowl until fluffy.

    Gradually mix in dry ingredients until dough forms.

Note

Use fresh lemon zest for the best flavor — it makes a big difference.

For thicker cookies, chill the dough for 30 minutes.

Add a lemon glaze for extra sweetness (powdered sugar + lemon juice).

Dough can be made ahead and chilled overnight.

Cookie dough freezes well — bake straight from frozen, adding 1 minute.
