In a skillet, melt butter and sauté diced apples with brown sugar, cinnamon, nutmeg, lemon juice, and vanilla until tender.
3 Roll out dough and cut into rounds. Press gently into muffin tin wells.
4 Fill each crust with apple mixture.
5 Top with lattice strips, pastry lids, or leave open. Brush with egg wash if desired.
6 Bake for 22–25 minutes, until golden and fragrant.
7 Cool slightly before serving.
