Mini Apple Pies

Ingredients
  • 4 cups diced Granny Smith apples , peeled and cored (about 4 medium apples)
  • 3 tablespoons unsalted butter
  • 1/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 sheets refrigerated pie dough (or 1 sheet puff pastry, thawed)
  • 1 large egg, beaten, for egg wash
  • 1 tablespoon turbinado sugar, for topping

    Preheat oven to 180°C / 350°F and lightly grease a muffin tin.

    In a skillet, melt butter and sauté diced apples with brown sugar, cinnamon, nutmeg, lemon juice, and vanilla until tender.

    Roll out dough and cut into rounds. Press gently into muffin tin wells.

    Fill each crust with apple mixture.

    Top with lattice strips, pastry lids, or leave open. Brush with egg wash if desired.

    Bake for 22–25 minutes, until golden and fragrant.

    Cool slightly before serving.
