Mini chicken and waffles

Ingredients
    INGREDIENTS — CHICKEN
  • • 1 lb boneless chicken tenders, cut into 1-inch pieces
  • • 1 cup buttermilk
  • • 1 cup all-purpose flour
  • • ¼ cup cornstarch
  • • 1 tsp paprika
  • • ½ tsp garlic powder
  • • 1 tsp salt
  • • ½ tsp black pepper
  • • Oil for frying
  • INGREDIENTS — WAFFLES
  • • 1½ cups all-purpose flour
  • • 1 tbsp baking powder
  • • 1 tbsp sugar
  • • ¼ tsp salt
  • • 2 eggs
  • • 1¼ cups milk
  • • ⅓ cup butter, melted
  • • ½ cup maple syrup, for serving

    1. Cut chicken into 1-inch pieces, soak in buttermilk at least 30 minutes.

    2. Whisk waffle dry ingredients. Combine with beaten eggs, milk, and melted butter just until combined.

    3. Cook waffle batter in mini waffle maker, 3–4 minutes each.

    4. Combine flour, cornstarch, paprika, garlic powder, salt, and pepper. Dredge chicken pieces thoroughly.

    5. Fry chicken in 350°F oil, 6–8 minutes per batch, until internal temp reaches 165°F. Drain on wire rack.

    6. Cut waffles to match chicken piece size. Thread one waffle piece and one chicken piece onto each skewer.

    7. Warm maple syrup and drizzle over assembled skewers right before serving.
