Parmesan Smashed Potatoes

Ingredients

lbs baby potatoes or small Yukon gold potatoes
3
tablespoons
olive oil
¾ cup finely grated parmesan cheese
2
cloves
garlic, minced
(or 1 teaspoon garlic powder)
¾ teaspoon salt
½ teaspoon black pepper
Fresh parsley or chives, finely chopped
(optional)
Instructions

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Add the potatoes to a large pot of salted water and boil until fork-tender, about 15–20 minutes. Drain and let them cool slightly.

Arrange the potatoes on the prepared baking sheet.

Gently smash each potato using the bottom of a glass until flattened but still intact.

Brush the potatoes with olive oil, then season with salt, pepper, garlic, and parmesan cheese.

Bake for 25–30 minutes, or until the edges are crispy and the cheese is golden.

Garnish with fresh herbs just before serving.
