Ingredients

  • ½ cup (1 stick)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cups ½ all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ¾ cup diced peaches (fresh or canned, well-drained)
  • For the Streusel Topping
  • ¼ cup brown sugar
  • ¼ cup flour
  • 2 tbsp ½ cold butter
  • Pinch of cinnamon

    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

    Make the streusel topping: Combine brown sugar, flour, cinnamon, and cold butter. Cut into crumbs and chill until ready to use.

    Cream butter and sugars until fluffy, about 2 minutes.

    Add egg and vanilla, mixing until smooth.

    Stir in flour, baking soda, salt, and cinnamon until dough forms.

    Fold in diced peaches gently to avoid overmixing.

    Scoop cookie dough (about 1½ tbsp per cookie) onto prepared trays.
