Ingredients
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup crushed pineapple (drained)
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
Instructions

    Preheat oven to 350°F (175°C). Line baking sheet with parchment.

    Cream butter and sugar until fluffy.

    Add egg, vanilla, and pineapple. Mix well.

    In separate bowl, whisk flour, baking powder, salt. Add to wet.

    Scoop dough onto tray.

    Bake 10–12 mins. Cool and serve.
Note

For best results, drain the pineapple thoroughly to avoid soggy dough. These pineapple cookies are a fun twist for baby showers or tropical events.
