Puff Pastry Apple Pie

Ingredients
  • • 2 sheets puff pastry, thawed
  • • 3 cups apples, thinly sliced (Granny Smith or Honeycrisp)
  • • ⅓ cup brown sugar, packed
  • • 1 tsp ground cinnamon
  • • ¼ tsp nutmeg
  • • 1 tbsp lemon juice
  • • 1 tbsp cornstarch
  • • 1 egg, beaten with 1 tsp water
  • • 1 tbsp coarse sugar, optional
Instructions

    Preheat oven to 400°F (200°C).

    Toss apples with lemon juice, sugar, cinnamon, nutmeg, and cornstarch.

    Roll out one puff pastry sheet and place in pie dish.

    Add apple filling (leave excess juice).

    Top with second pastry sheet, seal edges, and cut slits.

    Brush with egg, sprinkle sugar, and bake 25–30 mins. Cool before slicing.
Note

For mini versions, use a muffin tin and cut puff pastry into smaller rounds or squares.

Best served warm with whipped cream or vanilla ice cream.

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in oven at 350°F to keep the pastry crisp.
