Raspberry White Chocolate Cookies

Ingredients
  • • 1/2 cup unsalted butter, softened (1 stick)
  • • 1/2 cup granulated sugar
  • • 1/4 cup brown sugar, packed
  • • 1 large egg
  • • 1 teaspoon vanilla extract
  • • 1 1/2 cups all-purpose flour, spooned and leveled
  • • 1/2 teaspoon baking soda
  • • 1/4 teaspoon salt
  • • 2/3 cup frozen raspberries (do not thaw)
  • • 3/4 cup white chocolate chunks (chopped bar preferred)
Instructions

    Preheat oven to 350°F. Line a sheet pan with parchment.

    Cream butter and both sugars until lightened.

    Mix in egg and vanilla.

    Add flour, baking soda, and salt. Stir until just combined.

    Working quickly, fold in frozen raspberries and white chocolate chunks in 6–8 strokes.

    Scoop immediately onto pan. Refrigerate 15–20 minutes.

    Bake 10–12 minutes until edges are golden. Cool on pan 5 minutes before moving to a rack.
