Ingredients
  • • 10 oz frozen chopped spinach, thawed and squeezed very dry (280 g)
  • • 2 cups seasoned dry bread stuffing mix
  • • 1 cup Parmesan cheese, freshly grated
  • • 2 eggs, lightly beaten
  • • 4 tablespoons unsalted butter, melted (60 g)
  • • 1 teaspoon onion powder
  • • 1 teaspoon garlic powder
  • • ½ teaspoon dried thyme
  • • Salt and black pepper
  • • Optional for serving: honey mustard, ranch, or Greek yogurt dill dip

    Thaw the frozen spinach and squeeze out all excess moisture.

    Combine stuffing mix, Parmesan, onion powder, garlic powder, and thyme in a large bowl.

    Beat the eggs, melt the butter, and mix them.

    Pour the egg–butter mixture over the dry ingredients, then add the spinach.

    Mix everything with your hands until fully combined.

    Preheat the oven to 350°F (175°C)

    Roll the mixture into 1-inch balls and place them on the baking sheet.

    Bake for 15–20 minutes.
