Strawberry Crunch Cookies

Ingredients
  • ½ cup (1 stick)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • Crunch Topping:
  • ½ cup freeze-dried strawberries, crushed
  • 6 Golden 6–8 Oreos, crushed
  • 2 tbsp melted unsalted butter
  • 1 1–2 Optional: drops pink food coloring
Instructions

    Preheat oven to 350°F (175°C). Line a baking tray with parchment.

    Beat softened butter and sugars until light and fluffy (2–3 min).

    Add egg and vanilla. Mix until smooth.

    In a separate bowl, whisk flour, baking soda, and salt.

    Add dry ingredients to wet mixture. .

    Scoop 1.5-inch cookie dough balls onto baking tray.

    In a small bowl, mix crushed strawberries, crushed Oreos, and melted butter. Add coloring if desired.

    Press topping gently onto each dough ball.

    Bake for 9–11 min until edges are golden.

    Let cool 5 min on tray, then move to a rack.
Note

Use evenly crushed freeze-dried strawberries and Oreos. Press topping gently before baking. Add extra topping after baking for more crunch.
